Apple fritters are a perfect way to enjoy these special apples during the autumn months. They are very much like a donut and apple pie combination. The fritters are slowly fried at a moderate temperature to create a perfect balance. The exterior of these apple fritters will be crunchy on the outside. Yet moist and lusciously apple-filled on the inside. Making the sinfully delicious!
The technique of pre-cooking the apples a little before adding them to the batter is key! While frying these irresistible fritters the apples soften even further creating a decadently soft apple similar to an apple pie. The best part is that once you make this recipe you’ll be looking forward to making it again and again.
Honeycrisp Apple Fritters
(Makes 8-10 fritters)
Ingredients
- 3 Honeycrisp apples, medium-sized
- 2 cups all-purpose flour
- 5-1/2 tablespoons of sugar
- 2-1/2 teaspoons of baking powder
- 1 teaspoon of salt
- 2 teaspoons of cinnamon
- 1/2 teaspoon of nutmeg
- 2 eggs
- 2 teaspoons of vanilla extract
- 1/2 cup of milk
- 2 tablespoons of melted cooled unsalted butter
- 2-3 cups of Canola oil for frying
To cook the apples
- 2 tablespoons of sugar
- 1 teaspoon of cinnamon
- 2 tablespoons of butter
- 1/2 teaspoon of vanilla
To make the glaze
- 2 cups of powdered sugar
- 1/4 cup of milk
- 1/2 tablespoon of vanilla
Make the batter
- In a large bowl add the flour, sugar, baking powder, salt, cinnamon, and nutmeg and mix all well.
- Now in another bowl add all the liquid ingredients. The eggs, milk, vanilla, and melted butter. Whisk all together.
- Add the dry ingredients to the wet ingredients a little at a time to create a smooth batter.
Tip: Adding the wet ingredients to the bowl of dry ingredients can end up being clumpy and messy.
- Now peel and core your apples and cut them into uniform 1/2-inch cuts.
- Place them in a bowl and add the sugar, cinnamon, and vanilla extract.
- Mix all well to completely coat the apples.
- Heat a saute pan over medium and add the butter.
- Once the butter is melted and frothy add the apples.
- Cook the apples over a medium-low flame for about 6-8 minutes.
Tip: You pre-cook the apples slightly so that they are nice and soft (like apple pie filling) once the fritters are completely cooked. A good tip for when to stop cooking the apples is when all the liquid that was released from the apples is totally evaporated from the pan.
- Place the apples on a plate to cool.
- Once cooled add them to the batter with any juice that has accumulated on the plate.
- Mix well to coat all the apples.
To cook the fritters
- Add the canola oil to a pot.
- Heat the oil to 360°F.
- You can use a kitchen thermometer to check for the correct temperature.
Tip: If you do not have a kitchen thermometer you can drop a teaspoon amount of batter in the hot oil. It should sizzle and color up in about 3 minutes.
- Once the oil is ready you are ready to fry.
- 3 tablespoons are what I use to create one fritter.
- Use two spoons and drop the eyeballed (3 tablespoons) amount into the oil and spread them a little as they begin to fry to make a nice uniform shape.
- You can cook three or four at one time depending on the size of your pot.
- Let them cook for 3 minutes (or until a deep golden color) on one side before flipping over to repeat.
- Drain them on a tray lined with absorbent paper to cool.
- As they cool make the glaze.
To make the glaze
Ingredients
- 2 cups of powdered sugar
- 1/4 cup milk (may not need all)
- 1/2 teaspoon of vanilla
To make
- Sift the powdered sugar into a bowl
- Add the vanilla and pour in half the milk and stir well.
Tip: The small amount of milk will bring it all together. Add a little more milk if you prefer a more runny glaze.
- Use a pastry brush to glaze the fritters or drizzle the glaze from a tablespoon to form a more decorative pattern.
- Let the glaze set for a few minutes before serving.
